  • 1 tablespoon butter
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 6 cups fresh spinach
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 6 cups day-old bread, cubed
  • 1.5 cups shredded Gruyere cheese
  • 0.5 cups shredded Parmesan cheese
  • 6 large eggs
  • 2 cups milk
  • 0.5 cups heavy cream
  • 1 tablespoon Dijon mustard

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.

Step 2

Heat the olive oil and butter in a large skillet over medium heat. Add the onion and sauté for 3-4 minutes until softened.

Stir in the garlic and cook for another minute, until fragrant.

Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until the mushrooms release their moisture and are browned.
