Ingredients

  • 1 pre-made pie crust
  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 3 cups spinach, fresh
  • 4 large eggs
  • 1 cup heavy cream
  • 0.5 cup milk
  • 1 cup shredded Gruyere or Swiss cheese
  • 0.75 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon nutmeg (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Place the pre-made pie crust in a 9-inch pie dish. Trim and crimp the edges if necessary. Prick the bottom of the crust with a fork and pre-bake for 10 minutes. Remove from oven and set aside.

Step 2

In a large skillet, melt the butter over medium heat. Add the onion and garlic, cooking for 2-3 minutes until fragrant and softened.

Step 3

Add the sliced mushrooms to the skillet and sauté for 5-7 minutes until they release their moisture and begin to brown.

Step 4

Add the fresh spinach to the skillet, stirring until wilted, about 2 minutes. Remove from heat and let the mixture cool slightly.

Step 5

In a mixing bowl, whisk together the eggs, heavy cream, milk, salt, black pepper, and nutmeg (if using) until well combined.

Step 6

Sprinkle half of the shredded cheese evenly over the bottom of the pre-baked crust. Layer the sautéed spinach and mushroom mixture on top of the cheese.

Step 7

Pour the egg mixture over the filling, ensuring it spreads evenly. Top with the remaining shredded cheese.

Step 8

Bake the quiche in the preheated oven for 35-40 minutes, or until the filling is set and the top is golden brown. A toothpick inserted in the center should come out clean.

Step 9

Remove from the oven and let the quiche cool for 5-10 minutes before slicing. Serve warm or at room temperature.
