Ingredients

  • 12 sheets Lasagna noodles
  • 2 tablespoons Olive oil
  • 4 cups Baby spinach
  • 2 cups Mushrooms (finely chopped)
  • 2 cups Ricotta cheese
  • 1 cup Parmesan cheese (grated)
  • 1 large Egg
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 3 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 2 cups Milk
  • 1 cup Gorgonzola cheese (crumbled)
  • 0.25 teaspoons Nutmeg (optional)
  • 1 cup Mozzarella cheese (shredded)
  • 2 tablespoons Parsley (chopped, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set it aside.

Cook the lasagna noodles according to package instructions until al dente. Drain and lay the noodles on a parchment-lined surface to prevent sticking.

Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the chopped mushrooms and cook for 5-7 minutes until softened and golden. Add the baby spinach and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.
