Ingredients

  • 2.5 cups All-purpose flour
  • 1 packet Instant yeast
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 1 cup Warm water
  • 2 tablespoons Olive oil
  • 2 cups Fresh spinach, chopped
  • 1 cup Button mushrooms, sliced
  • 1 cup Cherry tomatoes, halved
  • 2 cloves Garlic, minced
  • 1 cup Mozzarella cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 0.5 teaspoon Dried oregano
  • 0.5 teaspoon Dried basil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 Egg, beaten (for egg wash)

Directions

Step 1

In a large mixing bowl, combine the flour, instant yeast, sugar, and salt. Mix well.

Step 2

Add the warm water and olive oil to the flour mixture. Stir until the dough comes together.

Step 3

Knead the dough on a lightly floured surface for about 8 minutes until smooth and elastic. Cover the dough with a damp cloth and let it rise for 1 hour or until doubled in size.

Step 4

While the dough is rising, heat 1 tablespoon of olive oil in a skillet over medium heat.

Step 5

Add the minced garlic and sliced mushrooms to the skillet. Sauté for 5-6 minutes until the mushrooms release their moisture and begin to brown.

Step 6

Add the chopped spinach and halved cherry tomatoes to the skillet. Cook for 2-3 minutes until the spinach wilts slightly. Season with the dried oregano, basil, salt, and black pepper. Remove from heat and let cool slightly.

Step 7

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 8

Once the dough has risen, punch it down and divide into 4 equal portions. Roll each portion into a circle approximately 8 inches in diameter.

Step 9

Place a generous spoonful of the spinach, mushroom, and tomato mixture onto one-half of each dough circle, leaving a 1-inch border.

Step 10

Top the filling with shredded mozzarella and grated Parmesan cheese.

Step 11

Fold the empty side of the dough over the filling to create a half-moon shape. Press the edges together to seal, then crimp with a fork for extra security.

Step 12

Transfer the calzones to the prepared baking sheet. Brush the tops with beaten egg for a golden-brown finish.

Step 13

Bake in the preheated oven for 18-20 minutes or until the calzones are golden and cooked through.

Step 14

Allow the calzones to cool for 5 minutes before serving. Enjoy them warm with marinara sauce for dipping!
