  • 4 cups Baby spinach
  • 1.5 cups, sliced Cremini mushrooms
  • 0.5 cups, crumbled Feta cheese

Directions

Step 1

Preheat your oven to 375°F (190°C).

In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Set aside.

Heat 2 tablespoons of olive oil in an oven-safe skillet over medium heat.
