Ingredients

  • 4 pieces Flour tortillas
  • 2 cups Fresh spinach
  • 1 cup Mushrooms, sliced
  • 0.5 cup Fresh cilantro, chopped
  • 1.5 cups Shredded cheese (cheddar, mozzarella, or a blend)
  • 2 tablespoons Butter or olive oil
  • 2 cloves Garlic, minced
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0 Optional: sour cream or salsa for serving

Directions

Step 1

Heat 1 tablespoon of butter or olive oil in a large skillet over medium heat.

Step 2

Add the minced garlic and sliced mushrooms to the skillet. Sauté for 3-4 minutes, or until the mushrooms are tender and release their moisture.

Step 3

Add the fresh spinach to the skillet and cook for an additional 2 minutes, stirring occasionally, until the spinach wilts. Season with salt and black pepper. Remove the mixture from the skillet and set aside.

Clean the skillet or use a second one. Place it over medium heat and lightly grease it with a small amount of butter or olive oil.

Lay one tortilla flat in the skillet. Sprinkle a layer of shredded cheese (about 1/4 cup) over half of the tortilla.
