Ingredients

  • 120 grams Fresh spinach
  • 200 grams All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 large Eggs
  • 120 milliliters Milk
  • 60 milliliters Olive oil
  • 50 grams Grated Parmesan cheese
  • 1 teaspoon Minced garlic

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a 12-cup muffin tin with paper liners or grease the cups with non-stick spray.

Step 2

Rinse the fresh spinach, pat it dry, and roughly chop it. Set aside.

Step 3

In a large mixing bowl, sift together the all-purpose flour, baking powder, salt, and black pepper.

Step 4

In a separate bowl, whisk the eggs. Mix in the milk, olive oil, and minced garlic until well combined.

Step 5

Add the wet ingredients to the bowl of dry ingredients and gently stir until just combined. Do not overmix.
