Ingredients

  • 1 pound Ground beef or turkey
  • 2 cups Fresh spinach
  • 1 cup Breadcrumbs
  • 0.5 cup Parmesan cheese, grated
  • 1 large Egg
  • 2 cloves Garlic, minced
  • 0.5 cup Onion, finely diced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Dried oregano
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper for easy cleanup.

Step 2

Rinse the spinach thoroughly, then chop it finely. Alternatively, you can pulse it in a food processor for even finer consistency.

Step 3

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and diced onion, and sauté until fragrant and translucent, about 3-4 minutes. Remove from heat and set aside to cool slightly.

Step 4

In a large mixing bowl, combine the ground meat, chopped spinach, breadcrumbs, Parmesan cheese, egg, sautéed garlic and onion, salt, black pepper, and oregano. Mix well using your hands or a spoon until the ingredients are fully incorporated.

Step 5

Scoop about 2 tablespoons of the mixture and roll it into a ball. Repeat this process until all the meat mixture is used, placing the meatballs on the prepared baking sheet as you go.

Lightly brush the meatballs with the remaining olive oil to help them brown evenly while baking.

Bake the meatballs in the preheated oven for 18-20 minutes, or until they are cooked through and reach an internal temperature of 165°F (74°C).
