Ingredients

  • 200 grams Fresh spinach leaves
  • 400 grams Plain yoghurt (full-fat or Greek-style)
  • 1 tablespoon Cooking oil
  • 1 teaspoon Cumin seeds
  • 1 whole Green chilli (finely chopped)
  • 1 teaspoon Ginger (grated)
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chilli powder
  • 0.75 teaspoon Salt
  • 0.5 teaspoon Sugar
  • 2 tablespoons Fresh coriander leaves (chopped, for garnish)

Directions

Step 1

Rinse the fresh spinach leaves thoroughly under cold water to remove any dirt or grit. Drain well and chop finely.

Step 2

In a medium-sized skillet, heat 1 tablespoon of cooking oil over medium heat. Add the cumin seeds and let them sizzle for 30 seconds until aromatic.

Add the chopped green chilli and grated ginger to the skillet, sautéing for 1 minute.

Stir in the chopped spinach, turmeric powder, and a pinch of salt. Cook for about 3-4 minutes until the spinach wilts and its moisture evaporates. Allow the mixture to cool to room temperature.

In a mixing bowl, whisk the plain yoghurt until smooth. Add red chilli powder, remaining salt, and sugar, and mix thoroughly to balance the flavors.
