Ingredients

  • 400 grams fresh spinach

  • 2 units garlic cloves, minced
  • 1 teaspoon ginger, finely grated
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 0.5 teaspoon red chili flakes (optional)
  • 1 tablespoon vegetable oil
  • 0.5 teaspoon salt
  • 2 liters water (for blanching spinach)
  • 1 bowl ice (for cooling spinach after blanching)

Directions

Step 1

Wash the spinach thoroughly to remove any dirt or debris. Keep it aside.

Step 2

Bring 2 liters of water to a boil in a large pot. Add the 0.5 teaspoon of salt.

Blanch the spinach by adding it to the boiling water and cooking for 1 minute. Drain immediately and transfer to a bowl of ice water to halt the cooking process.

Once cool, drain the spinach well and gently squeeze out excess water. Set aside.

In a medium saucepan, heat 1 tablespoon of vegetable oil over medium heat.
