Ingredients

  • 2 cups Fresh spinach leaves
  • 1 can (15 oz) Canned chickpeas (garbanzo beans), drained and rinsed
  • 3 tablespoons Tahini (sesame paste)
  • 3 tablespoons Extra-virgin olive oil
  • 2 tablespoons Fresh lemon juice
  • 2 Garlic cloves, minced
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 3 tablespoons Cold water

Directions

Step 1

Wash and dry the fresh spinach leaves thoroughly.

Step 2

In a large skillet over medium heat, sauté the spinach leaves with 1 tablespoon of water (if needed) just until wilted, about 1-2 minutes. Remove from heat and let cool slightly.

Step 3

In a food processor, combine the sautéed spinach, chickpeas, tahini, olive oil, lemon juice, minced garlic, cumin, salt, and black pepper.

Blend the mixture on high until smooth and creamy, scraping down the sides of the bowl as needed.

While blending, gradually add 1 tablespoon of cold water at a time until the desired consistency is reached.
