Ingredients

  • 200 grams fresh spinach leaves
  • 6 pieces garlic cloves
  • 1 medium-sized yellow onion
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 0.25 cup heavy cream (optional)
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon salt
  • 0.25 teaspoon red chili flakes (optional)

Directions

Step 1

Rinse the spinach leaves thoroughly under cold water, drain, and set aside.

Step 2

Peel and finely chop the onion. Peel the garlic cloves and leave them whole.

Step 3

Heat 2 tablespoons of olive oil in a large pot over medium heat.

Step 4

Add the whole garlic cloves to the pot and sauté for 2-3 minutes, stirring frequently, until lightly golden and aromatic. Remove them from the pot and set aside.

Step 5

In the same pot, add the chopped onion and sauté for 3-4 minutes until soft and translucent.

Step 6

Add the spinach leaves to the pot and sauté for another 2 minutes, stirring occasionally, until they wilt down.

Step 7

Pour in the vegetable broth and stir to combine. Return the roasted garlic cloves to the pot.

Step 8

Bring the soup to a gentle boil, then reduce the heat to low. Let it simmer for 10 minutes to allow the flavors to meld.

Remove the pot from heat and let the soup cool slightly. Use an immersion blender or transfer the soup to a blender in batches to puree until smooth.
