Ingredients

  • 4 cups Fresh spinach leaves
  • 3 pieces Garlic cloves
  • 8 ounces Cream cheese
  • 1 cup Greek yogurt
  • 1 cup Parmesan cheese, grated
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Lemon juice
  • 4 pieces Whole wheat pita bread
  • 2 cups Carrots, cut into sticks
  • 2 cups Celery, cut into sticks
  • 2 cups Bell peppers, cut into strips

Directions

Step 1

Heat a large skillet over medium heat and add 1 tablespoon of olive oil.

Step 2

Add the fresh spinach to the skillet and sauté for 2-3 minutes until wilted. Remove from heat and let it cool slightly.

Step 3

In a food processor, combine the sautéed spinach, garlic cloves, cream cheese, Greek yogurt, Parmesan cheese, lemon juice, salt, and black pepper. Blend until smooth and creamy.
