Ingredients

  • 12 oz spinach fettuccine
  • 1 cup Greek yogurt (plain, full-fat)
  • 1 cup heavy cream
  • 2 garlic cloves (minced)
  • 3 oz Parmesan cheese (grated)
  • 1 tbsp olive oil
  • 1 cup baby spinach (optional, for garnish)
  • 1 tsp salt
  • 0.5 tsp black pepper (freshly ground)
  • 0.25 tsp red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spinach fettuccine and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining the pasta, then set the pasta aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.

Step 3

Lower the heat to medium-low and stir in the Greek yogurt and heavy cream. Whisk together until smooth and heated through, but do not let it boil to prevent curdling.

Step 4

Stir in the grated Parmesan cheese, salt, black pepper, and optional red pepper flakes. Continue stirring until the Parmesan cheese is melted and the sauce is creamy.

Step 5

Add the cooked spinach fettuccine to the skillet and toss to coat the pasta evenly in the sauce. If the sauce is too thick, add the reserved pasta water a tablespoon at a time until it reaches your desired consistency.

Step 6

Taste and adjust the seasoning with more salt or pepper as needed.

Step 7

Serve the pasta immediately, garnished with fresh baby spinach if desired, and a sprinkle of additional Parmesan cheese.
