Ingredients

  • 2 sheets puff pastry sheets
  • 8 cups fresh spinach
  • 1.5 cups feta cheese
  • 0.5 cups ricotta cheese
  • 1 medium, finely chopped onion
  • 2 cloves, minced garlic
  • 1 tablespoon olive oil
  • 1 large, beaten egg
  • 1 teaspoon dried oregano
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon salt
  • 1 large (for egg wash) egg yolk
  • 1 teaspoon (for egg wash) water

Directions

Step 1

Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.

Defrost the puff pastry sheets according to the package instructions while preparing the filling.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until soft and translucent, about 3-4 minutes.

Add the minced garlic and cook for an additional minute until fragrant.

Add the spinach to the skillet in batches, stirring until wilted. Remove from heat and allow the mixture to cool slightly.
