Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 2 cups Fresh spinach
  • 1 cup Feta cheese, crumbled
  • 4 tablespoons Cream cheese, softened
  • 3 cloves Garlic, minced
  • 2 tablespoons Olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.5 teaspoons Paprika

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the fresh spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

Step 3

In a medium-sized mixing bowl, combine the cooked spinach, feta cheese, cream cheese, and 1 teaspoon of Italian seasoning. Mix until all the ingredients are evenly incorporated.

Step 4

Using a sharp knife, carefully slice a pocket into the side of each chicken breast without cutting all the way through.

Step 5

Stuff each chicken breast with the spinach and feta mixture, using toothpicks to seal the edges if necessary.

Step 6

In a small bowl, mix 1 tablespoon of olive oil, the remaining 1 teaspoon of Italian seasoning, salt, black pepper, and paprika. Brush this mixture all over the stuffed chicken breasts.

Step 7

Heat a large oven-safe skillet over medium heat and add a drizzle of olive oil. Sear the chicken breasts on both sides until golden brown, about 2-3 minutes per side.

Step 8

Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).

Step 9

Remove the chicken from the oven and let it rest for 5 minutes before serving.

Step 10

Serve hot with your choice of sides, such as rice, mashed potatoes, or roasted vegetables.
