  • 500 grams fresh spinach
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion
  • 2 pieces garlic cloves
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 120 grams cream cheese
  • 50 grams grated Parmesan cheese
  • 100 grams shredded mozzarella cheese
  • 0.25 teaspoons nutmeg
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.5 cup panko breadcrumbs
  • 1 tablespoons olive oil

Directions

Step 1

Preheat your oven to 180°C (350°F).

Wash the spinach thoroughly and remove the tough stems. Blanch the spinach in boiling water for 1 minute, then drain and transfer to a bowl of ice water to cool. Squeeze out the excess water and roughly chop. Set aside.

Peel and finely dice the onion. Mince the garlic cloves.

In a large skillet, melt the butter over medium heat. Add the diced onion and sauté until soft and translucent, about 3 minutes. Add the minced garlic and sauté for another 30 seconds, until fragrant.
