Ingredients

  • 300 grams fresh spinach leaves
  • 250 grams ricotta cheese
  • 50 grams grated Parmesan cheese
  • 2 tablespoons all-purpose flour
  • 1 large egg
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon grated nutmeg
  • 24 pieces wonton wrappers
  • 2 tablespoons butter
  • 2 cloves finely chopped garlic

Directions

Step 1

Wash the spinach leaves thoroughly and remove any tough stems.

Step 2

Bring a pot of water to a boil and blanch the spinach for 1-2 minutes. Immediately transfer the spinach to a bowl of ice water to stop cooking.

Step 3

Drain and squeeze out excess water from the spinach, then chop it finely.

Step 4

In a large mixing bowl, combine the chopped spinach, ricotta cheese, Parmesan cheese, flour, egg, salt, pepper, and nutmeg. Mix until well combined.

Place a wonton wrapper on a clean flat surface and add about a teaspoon of spinach mixture in the center.
