Ingredients

  • 1 large Cob loaf
  • 250 grams Frozen spinach
  • 250 grams Cream cheese
  • 200 grams Sour cream
  • 1 cup Grated cheddar cheese
  • 1 large Garlic clove
  • 2 stalks Spring onions
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Thaw the frozen spinach by microwaving it for 2-3 minutes or letting it sit at room temperature. Squeeze out excess water using a clean kitchen towel or paper towels.

Step 3

Finely dice the garlic clove and chop the spring onions.

Step 4

In a large mixing bowl, combine the cream cheese, sour cream, grated cheddar cheese, thawed spinach, diced garlic, chopped spring onions, salt, and black pepper. Mix well until fully incorporated.

Step 5

Cut the top off the cob loaf and set it aside. Hollow out the inside of the loaf, creating a bowl, and reserve the bread pieces for dipping.

Step 6

Spoon the spinach dip mixture into the hollowed cob loaf, filling it to the brim.

Step 7

Place the filled cob loaf along with the reserved bread pieces on a baking tray. Bake in the preheated oven for 15-20 minutes, or until the dip is hot and bubbly and the bread is golden brown.

Step 8

Remove from the oven and let it cool slightly before serving.

Step 9

Place the cob loaf on a serving platter and arrange the toasted bread pieces around it for dipping.
