Ingredients

  • 1 whole Cobb loaf
  • 250 grams Frozen spinach
  • 250 grams Cream cheese
  • 200 grams Sour cream
  • 150 grams Shredded cheese (cheddar or mozzarella)
  • 50 grams Grated Parmesan cheese
  • 2 cloves Garlic cloves, minced
  • 2 stalks Green onions, finely sliced
  • 1 tablespoon Butter
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.

Step 2

Take the cobb loaf and carefully cut the top off to create a lid. Hollow out the inside of the loaf, setting aside the bread pieces and lid for later use.

Step 3

Thaw the frozen spinach by following package instructions and squeeze out excess liquid using a clean kitchen towel or cheesecloth.

Step 4

In a medium saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

Reduce the heat to low and add the cream cheese to the saucepan. Stir continuously until the cream cheese melts and becomes smooth.

Stir in the sour cream, grated Parmesan, and shredded cheese until the mixture is fully combined and the cheese has melted.

Add the thawed spinach, green onions, salt, and black pepper to the saucepan. Stir everything together and cook for 2-3 minutes until heated through.

Transfer the spinach dip mixture into the hollowed-out cobb loaf, filling it evenly.

Place the filled cobb loaf and the reserved bread pieces (for dipping) onto the prepared baking tray. Bake in the preheated oven for 20-25 minutes, or until the loaf is crispy and the dip is bubbling.

Remove from the oven and place the cobb loaf on a serving platter. Arrange the toasted bread pieces and cobb lid around the loaf for dipping.
