Ingredients

  • 200 grams fresh spinach leaves
  • 3 large eggs
  • 250 ml heavy cream
  • 100 ml milk
  • 50 grams grated Parmesan cheese
  • 1 clove garlic
  • 0.25 teaspoon nutmeg
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 teaspoon unsalted butter

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Grease four ramekins or a small baking dish with the unsalted butter and set aside.

Step 3

Wash the fresh spinach leaves thoroughly and pat them dry with a clean kitchen towel.

Step 4

In a pan over medium heat, lightly sauté the garlic clove (minced) until fragrant, about 1-2 minutes.

Add the spinach to the pan and cook until just wilted, about 2-3 minutes. Remove from heat and let cool slightly.

Using a food processor or blender, blend the cooked spinach and garlic until smooth. Set aside.
