Ingredients

  • 500 grams Fresh spinach
  • 1 cup Cottage cheese
  • 2 large Eggs
  • 1 cup Shredded mozzarella cheese
  • 0.5 cup Breadcrumbs
  • 0.25 cup Parmesan cheese
  • 1 medium, finely chopped Onion
  • 3 cloves, minced Garlic
  • 2 tablespoons Olive oil
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 180°C (350°F). Lightly grease a medium-sized casserole dish and set aside.

Step 2

Wash the spinach and remove any tough stems. Steam the spinach in a large pot with a small amount of water for 2-3 minutes, until wilted. Drain well and squeeze out excess moisture. Roughly chop the spinach and set aside.

Step 3

In a medium skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for an additional minute, stirring frequently.

Step 4

In a large mixing bowl, combine the cottage cheese, eggs, oregano, salt, and black pepper. Mix until well blended.

Step 5

Add the wilted spinach, sautéed onion, shredded mozzarella cheese, and half of the breadcrumbs to the cottage cheese mixture. Stir until evenly combined.

Step 6

Transfer the mixture to the prepared casserole dish and smooth out the top with a spatula.

In a small bowl, mix the remaining breadcrumbs with the grated Parmesan cheese. Sprinkle the breadcrumb mixture evenly over the top of the casserole.

Bake in the preheated oven for 30-35 minutes, or until the top is golden and the casserole is set in the center.
