Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 0.5 cup All-purpose flour
  • 2 large Eggs
  • 1 cup Breadcrumbs
  • 0.5 cup Grated Parmesan cheese
  • 2 tablespoons Olive oil
  • 4 cups Fresh spinach
  • 2 cloves Garlic cloves (minced)
  • 2 cups Marinara sauce
  • 1.5 cups Mozzarella cheese (shredded)
  • 0.25 cup Fresh basil leaves (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pound the chicken breasts to an even thickness of about 1/2 inch using a meat mallet. Season both sides with salt, black pepper, and paprika.

Step 3

Set up a breading station with three shallow bowls: one with the flour, one with the whisked eggs, and one with a mixture of breadcrumbs and grated Parmesan cheese.

Step 4

Dip each chicken breast in the flour, coating completely, then in the eggs, and finally in the breadcrumb mixture. Press lightly to ensure the breadcrumbs adhere well.

Step 5

In a large skillet, heat olive oil over medium heat. Cook the breaded chicken breasts for about 3-4 minutes per side, until golden brown. Do not cook all the way through; they will finish cooking in the oven. Place the browned chicken on a plate lined with paper towels to drain excess oil.

Step 6

In the same skillet, add a drizzle of olive oil if needed and sauté the minced garlic until fragrant, about 30 seconds. Add the fresh spinach and cook until wilted, about 2-3 minutes. Remove from heat.

Step 7

In a 9x13-inch baking dish, spread 1 cup of marinara sauce evenly on the bottom. Arrange the browned chicken breasts on top of the sauce.

Step 8

Spread the sautéed spinach over the chicken breasts, then spoon the remaining marinara sauce over the spinach and chicken.

Step 9

Sprinkle the shredded mozzarella cheese evenly over the top.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly, and the chicken is cooked through (internal temperature should reach 165°F/74°C).

Step 11

Remove from the oven and let rest for 5 minutes. Garnish with fresh basil leaves, if desired, before serving.

Step 12

Serve warm with your favorite side of pasta, salad, or bread.
