Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt

  • 2 tablespoons olive oil
  • 12 ounces dry fettuccine or spaghetti noodles
  • 3 cloves garlic cloves, minced
  • 6 cups baby spinach leaves
  • 1 cup feta cheese, crumbled
  • 0.5 cup heavy cream
  • 0.5 cup chicken broth
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Season the chicken breasts with salt, black pepper, and garlic powder on both sides.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook the chicken breasts for about 6-8 minutes per side, or until golden brown and fully cooked. Remove from the skillet and let rest for 5 minutes before slicing into thin strips.

While the chicken cooks, bring a large pot of salted water to a boil and cook the fettuccine or spaghetti noodles according to the package instructions. Reserve 1/2 cup of the pasta water, then drain and set aside.
