Ingredients

  • 1 piece Pie crust (9-inch, store-bought or homemade)
  • 4 cups Fresh spinach
  • 1 tablespoon Olive oil
  • 4 large Eggs
  • 1 cup Heavy cream
  • 1 cup Milk
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.25 teaspoon Nutmeg (optional, freshly grated)
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Grated Parmesan cheese
  • 1 teaspoon Minced garlic

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Roll out the pie crust and fit it into a 9-inch pie dish. Trim any excess dough and crimp the edges if desired. Dock the bottom of the crust with a fork to prevent bubbling.

Step 3

Blind bake the crust. Line it with parchment paper and fill it with pie weights or dried beans. Bake for 10 minutes. Remove the weights and parchment, then bake for another 5 minutes. Set aside to cool slightly.

Step 4

Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for 30 seconds until fragrant.
