Thaw the puff pastry sheets according to the package instructions until pliable but still cold.
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Wash the spinach thoroughly, then cook it in a skillet over medium heat until wilted. Remove from heat, let it cool, and squeeze out the excess water. Roughly chop the spinach.
In a mixing bowl, combine the cooked spinach, cream cheese, mozzarella cheese, Parmesan cheese, minced garlic, salt, and black pepper. Mix thoroughly until smooth and well combined.
Lightly flour a clean surface and roll out one of the puff pastry sheets to about 1/8-inch thickness. Repeat with the second sheet if needed.
Using a sharp knife or a pizza cutter, cut the puff pastry into squares of approximately 4x4 inches.
Place a tablespoon of the spinach-cheese mixture in the center of each pastry square.
Fold each square into a triangle by bringing opposing corners together. Seal the edges by pressing them with a fork to prevent filling from leaking out.
In a small bowl, whisk the egg with a splash of water to create an egg wash. Brush the tops of the pastry triangles with the egg wash to give them a golden shine when baked.
Transfer the prepared pastries to the lined baking sheet, spacing them about 1 inch apart.
Bake in the preheated oven for 20-25 minutes, or until the pastries are puffed and golden brown.
