  • 2 cups Spinach (fresh or frozen, thawed and drained)
  • 1 cup Ricotta cheese
  • 1 cup Mozzarella cheese (shredded)
  • 0.5 cup Parmesan cheese (grated)
  • 1 Egg
  • 2 cloves Garlic (minced)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 Puff pastry sheets (thawed)
  • 1 Egg (for egg wash)
  • 1 tablespoon Water

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

If using frozen spinach, thaw and squeeze out excess water. If using fresh spinach, sauté it in a skillet over medium heat until wilted, then drain and chop.

In a large mixing bowl, combine the spinach, ricotta cheese, shredded mozzarella, grated Parmesan, 1 egg, minced garlic, salt, and black pepper. Mix until well combined.

Unroll the thawed puff pastry sheets on a lightly floured surface. Cut each sheet into 4 equal squares, for a total of 8 squares.
