Ingredients

  • 3 cups All-purpose flour
  • 2.25 teaspoons Active dry yeast
  • 1 tablespoon Granulated sugar
  • 1 teaspoon Salt
  • 1 cup Warm water
  • 0.25 cup Milk
  • 3 tablespoons Olive oil
  • 4 cups Fresh spinach
  • 2 cloves Garlic cloves, minced
  • 1.5 cups Shredded mozzarella cheese
  • 0.5 cup Grated Parmesan cheese
  • 2 tablespoons Unsalted butter, melted
  • 1 large Egg
  • 0.5 teaspoon Dried oregano
  • 0.25 teaspoon Optional: crushed red pepper

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, active dry yeast, granulated sugar, and salt.

Step 2

In a separate bowl, mix the warm water, milk, and 2 tablespoons of olive oil. Gradually add this liquid mixture to the dry ingredients, stirring to form a dough.

Step 3

Turn the dough onto a floured surface and knead for 8-10 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise for 1 hour or until doubled in size.

Step 4

Meanwhile, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Stir in the fresh spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool.

Step 5

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Step 6

Once the dough has risen, punch it down and transfer it onto a floured surface. Roll the dough into a large rectangle, roughly 12x16 inches.

Step 7

Spread the cooled spinach mixture evenly over the dough, leaving a 1-inch border. Sprinkle the shredded mozzarella and Parmesan cheeses over the spinach.

Step 8

Carefully roll the dough tightly from one long end to the other, like a jelly roll. Pinch the seam to seal, then tuck the ends underneath. Place the loaf seam-side down on the prepared baking sheet.

Step 9

In a small bowl, whisk the egg and melted butter together. Brush the mixture generously over the dough. Sprinkle the top with dried oregano and crushed red pepper (if using).

Step 10

Use a sharp knife to make 4-5 shallow slashes diagonally across the top of the loaf.

Step 11

Bake in the preheated oven for 25-30 minutes, or until the bread is golden brown and sounds hollow when tapped.

Step 12

Allow the bread to cool for at least 10 minutes before slicing and serving. Enjoy warm or at room temperature.
