Ingredients

  • 900 grams fresh spinach, washed and chopped
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 400 ml milk, preferably whole milk
  • 120 grams cream cheese, softened
  • 150 grams shredded mozzarella cheese
  • 50 grams grated Parmesan cheese
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon ground nutmeg (optional)
  • 60 grams panko breadcrumbs
  • 1 tablespoon olive oil or melted butter (for topping)

Directions

Step 1

Preheat your oven to 190°C (375°F). Grease a medium-sized casserole dish and set it aside.

Step 2

In a large skillet, melt 3 tablespoons of unsalted butter over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until softened and translucent. Add the minced garlic and cook for an additional minute until fragrant.

Step 3

Stir in the all-purpose flour and cook for 1-2 minutes, stirring constantly, to form a roux.

Step 4

Gradually pour in the milk, whisking as you add it to prevent lumps. Cook the mixture, stirring constantly, for 3-4 minutes until it thickens into a smooth sauce.

Step 5

Add the cream cheese to the sauce and stir until melted and combined. Then, stir in the shredded mozzarella, grated Parmesan, salt, black pepper, and nutmeg (if using). Mix well and remove the skillet from the heat.

Step 6

In a large pot, bring water to a boil and blanch the chopped spinach for 1-2 minutes. Drain the spinach well, squeezing out as much excess water as possible, and add it to the cheese sauce. Stir until the spinach is fully coated.

Step 7

Pour the spinach mixture into the prepared casserole dish, spreading it evenly.

Step 8

In a small bowl, combine the panko breadcrumbs with 1 tablespoon of olive oil or melted butter. Sprinkle this mixture evenly over the top of the casserole.

Step 9

Bake the casserole in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is bubbling around the edges.

Step 10

Remove the casserole from the oven and let it cool for 5-10 minutes before serving. Enjoy your creamy, cheesy Spinach Casserole Simply Delicious!
