Ingredients

  • 16 ounces fresh spinach
  • 4 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 0.5 cups heavy cream
  • 0.5 cups grated Parmesan cheese
  • 1 cups grated cheddar cheese
  • 1 teaspoons garlic powder
  • 1 teaspoons onion powder
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.5 cups breadcrumbs
  • 1 tablespoons olive oil

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Wash and trim the spinach, then blanch it in a large pot of boiling water for 1-2 minutes until just wilted. Drain and squeeze out excess water. Roughly chop the spinach and set aside.

Step 3

In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes, stirring constantly, until the mixture forms a paste and is lightly golden.

Step 4

Gradually add the milk while whisking continuously to avoid lumps. Stir in the heavy cream and continue cooking for 3-4 minutes until the sauce thickens.

Step 5

Remove the saucepan from heat and stir in the Parmesan cheese, cheddar cheese, garlic powder, onion powder, salt, and black pepper. Mix well until the cheese is fully melted and incorporated.

Step 6

Fold the chopped spinach into the cheese sauce, ensuring that the spinach is evenly coated.

Step 7

Transfer the spinach mixture into a greased 9x9-inch baking dish.

Step 8

In a small bowl, mix the breadcrumbs with the olive oil until evenly coated. Sprinkle the breadcrumb mixture evenly over the top of the casserole.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and bubbling.

Step 10

Allow the casserole to cool for 5 minutes before serving. Enjoy!
