Ingredients

  • 900 grams fresh spinach leaves
  • 60 grams butter
  • 1 large, finely chopped onion
  • 3 cloves, minced garlic
  • 3 tablespoons all-purpose flour
  • 240 ml whole milk
  • 240 ml heavy cream
  • 120 grams grated Parmesan cheese
  • 240 grams shredded mozzarella cheese
  • 0.25 teaspoon ground nutmeg
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 90 grams panko bread crumbs
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease a 9x13-inch baking dish and set aside.

Step 2

In a large pot of boiling salted water, cook the spinach for 2 minutes until wilted. Drain and squeeze out excess water. Coarsely chop the spinach.

Step 3

In a large skillet over medium heat, melt the butter. Add the finely chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

Stir in the flour and cook, stirring constantly, for 1 to 2 minutes until it forms a paste with the butter and onions.
