Ingredients

  • 4 cups fresh spinach
  • 1 large egg
  • 0.75 cup rolled oats
  • 0.25 cup grated Parmesan cheese
  • 0.333333 cup breadcrumbs
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon salt
  • 2 tablespoons olive oil

Directions

Step 1

Heat a large skillet over medium heat and add 2 tablespoons of water. Add the fresh spinach and sauté until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.

Step 2

Once the spinach has cooled, squeeze out the excess moisture using a clean kitchen towel or paper towel. Chop the spinach finely and set it aside.

Step 3

In a large mixing bowl, whisk the egg. Add the finely chopped spinach, rolled oats, grated Parmesan, breadcrumbs, garlic powder, onion powder, ground black pepper, and salt. Mix everything thoroughly until well combined.

Step 4

Divide the mixture into 4 equal portions and shape each portion into a burger patty. Make sure the patties are compact and hold their shape.

Step 5

Heat 2 tablespoons of olive oil in a nonstick skillet over medium heat. Once hot, add the spinach patties and cook for 3-4 minutes on each side, or until golden brown and firm to the touch.
