Ingredients

  • 2 cups fresh spinach
  • 1 cup unsalted butter
  • 1.5 cups semi-sweet chocolate chips
  • 1 cup granulated sugar
  • 0.5 cup brown sugar
  • 3 pieces large eggs
  • 1 teaspoon vanilla extract
  • 0.75 cup all-purpose flour
  • 0.25 cup cocoa powder
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a mini muffin tin or line it with mini paper liners.

Step 2

Rinse the fresh spinach thoroughly and pat it dry. Blend the spinach in a food processor or blender until smooth. You should end up with about 1/2 cup of spinach puree. Set it aside.

In a medium saucepan, melt the butter over low heat. Once melted, add the semi-sweet chocolate chips and stir continuously until smooth and fully melted. Remove the saucepan from heat and let it cool slightly.

In a mixing bowl, whisk together the granulated sugar, brown sugar, eggs, and vanilla extract until smooth and creamy. Stir in the spinach puree until fully incorporated.
