Ingredients

  • 1 cup (uncooked) brown rice
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 (medium, finely diced) yellow onion
  • 3 cloves (minced) garlic
  • 6 cups (roughly chopped) fresh spinach
  • 2 (large, beaten) eggs
  • 1 cup plain Greek yogurt
  • 0.5 cup milk
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 0.25 teaspoon red pepper flakes (optional)
  • 0.5 cup (for topping) shredded cheddar cheese

Directions

Step 1

Preheat the oven to 375°F (190°C) and grease a 9x13-inch casserole dish with cooking spray or olive oil.

Step 2

In a medium saucepan, combine the uncooked brown rice and 2 cups of water. Bring to a boil, cover, reduce heat to low, and simmer for about 30-35 minutes or until the rice is tender and the water is absorbed. Set aside to cool slightly.

Step 3

Meanwhile, heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the chopped spinach to the skillet and cook for 2-3 minutes, stirring occasionally, until wilted. Remove from heat and set aside.

Step 5

In a large mixing bowl, whisk together the eggs, Greek yogurt, milk, salt, black pepper, paprika, and red pepper flakes (if using). Stir in the shredded mozzarella cheese and grated Parmesan cheese until evenly combined.

Step 6

Add the cooked brown rice and the spinach mixture to the bowl. Mix thoroughly until all the ingredients are evenly distributed.

Step 7

Transfer the mixture to the prepared casserole dish and spread it out in an even layer. Sprinkle the shredded cheddar cheese evenly over the top.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the casserole is heated through and the cheese on top is melted and golden brown.

Step 9

Remove from the oven and let the casserole cool for 5 minutes before serving. Enjoy your creamy and delicious Spinach Brown Rice Casserole!
