Ingredients

  • 2 sheets Puff pastry sheets
  • 4 cups Fresh spinach
  • 8 ounces Brie cheese
  • 2 cloves Garlic (minced)
  • 1 tablespoon Unsalted butter
  • 1 teaspoon Olive oil
  • 1 large Egg
  • 1 tablespoon Water
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a large skillet over medium heat, melt the butter with the olive oil.

Step 3

Add the minced garlic and cook for 1 minute until fragrant.

Step 4

Add the spinach to the skillet and sauté for 2-3 minutes until wilted. Season with salt and black pepper, then remove from heat. Transfer to a colander or paper towels to remove excess moisture. Let it cool slightly.

Step 5

Cut the Brie cheese into small 1-inch cubes.

Step 6

Unfold the puff pastry sheets on a lightly floured surface. Roll out each sheet slightly to smooth out the creases, then cut each sheet into 12 equal squares (for a total of 24 squares).

Step 7

Place a cube of Brie in the center of 12 pastry squares. Top each with a small spoonful of the sautéed spinach.

Step 8

Brush the edges of the pastry squares with the egg wash (whisk together the egg and water).

Step 9

Place the remaining 12 pastry squares over the ones with filling. Press the edges together to seal, then crimp them with a fork to ensure they’re fully sealed.

Step 10

Brush the tops of the puffs with the remaining egg wash for a golden finish.

Step 11

Transfer the sealed puffs onto the prepared baking sheet, leaving about 1-2 inches of space between each.

Step 12

Bake for 20-25 minutes, or until the puffs are golden brown and flaky.

Step 13

Allow to cool for a few minutes before serving. Enjoy warm!
