Ingredients

  • 3 cups All-purpose flour
  • 3 cups Fresh spinach
  • 1 cup Warm water
  • 0.25 cup Milk
  • 2.25 teaspoons Active dry yeast
  • 1 tablespoon Granulated sugar
  • 1.5 teaspoons Salt
  • 0.25 cup Olive oil
  • 2 pieces Garlic cloves (minced)
  • 0.25 cup Parmesan cheese (optional, grated)

Directions

Step 1

Rinse the spinach leaves thoroughly, then blanch them in boiling water for 1-2 minutes until wilted. Drain and allow to cool. Squeeze out any excess water, then puree the spinach in a blender or food processor until smooth. Set aside.

Step 2

In a large mixing bowl, combine warm water, yeast, and sugar. Stir gently and let it sit for 5-10 minutes until it becomes frothy.

Step 3

Add the pureed spinach, milk, olive oil, minced garlic, and salt to the yeast mixture. Mix until well combined.

Step 4

Gradually add the all-purpose flour, one cup at a time, mixing after each addition. Once the dough starts to come together, transfer it to a floured surface and knead for about 8-10 minutes until the dough is smooth and elastic. Alternatively, use a stand mixer with a dough hook for kneading.

Step 5

Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place for 1 hour or until it doubles in size.

Step 6

Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper.

Step 7

Punch down the risen dough to release air, then shape it into a loaf. Place the dough in the prepared loaf pan. If desired, sprinkle the top with grated Parmesan cheese for added flavor.

Step 8

Cover the loaf pan loosely with a towel and let the dough rise again for 20-30 minutes until it puffs up slightly.

Step 9

Bake the spinach bread in the preheated oven for 30-35 minutes or until the top is golden brown and the bread sounds hollow when tapped.

Step 10

Remove the bread from the oven and let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
