Ingredients

  • 6 cups Baby spinach
  • 2 Blood oranges
  • 0.5 cups Macadamia nuts
  • 0.25 cups Feta cheese (optional)
  • 3 tablespoons Extra virgin olive oil
  • 2 tablespoons Fresh orange juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and dry the baby spinach thoroughly and place it in a large mixing bowl.

Step 2

Peel the blood oranges, then slice them into thin rounds or segments, removing any seeds. Add them to the spinach.

Step 3

Roughly chop the macadamia nuts and toast them in a dry skillet over medium heat for about 2–3 minutes until golden and fragrant. Let them cool slightly, then sprinkle over the salad.

Step 4

If using, crumble the feta cheese and scatter it over the salad for a creamy and tangy touch.

Step 5

To make the citrus vinaigrette, whisk together olive oil, fresh orange juice, Dijon mustard, honey, salt, and pepper in a small bowl until emulsified.

Step 6

Drizzle the vinaigrette over the salad just before serving and gently toss to combine.

Step 7

Serve immediately and enjoy!
