Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 medium potato, peeled and diced
  • 4 cups chicken or vegetable broth
  • 6 cups fresh spinach leaves
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 cup croutons or fresh bread (optional, for garnish)

Directions

Step 1

In a large pot, heat the butter and olive oil over medium heat until the butter melts.

Step 2

Add the diced onion and sauté for 3-4 minutes, or until softened and translucent.

Step 3

Stir in the minced garlic and cook for another 1 minute, being careful not to burn it.

Step 4

Add the diced potato and pour in the chicken or vegetable broth. Bring to a boil, then reduce heat to a simmer.

Cook the potato for 10-12 minutes, or until it is tender and easily pierced with a fork.
