Ingredients

  • 400 grams canned black beans (drained and rinsed)
  • 100 grams baby spinach (chopped)
  • 120 grams breadcrumbs
  • 50 grams rolled oats
  • 1 small red onion (finely chopped)
  • 2 pieces garlic cloves (minced)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1.5 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 piece egg (beaten, or flax egg for vegan version)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

In a large mixing bowl, mash the black beans with a fork or potato masher until mostly smooth. Leave some chunks for texture.

Step 2

Add the chopped spinach, breadcrumbs, rolled oats, red onion, garlic, ground cumin, smoked paprika, soy sauce, olive oil, beaten egg (or flax egg), salt, and black pepper to the bowl.

Step 3

Mix everything thoroughly until a consistent mixture is formed. If the mixture feels too wet, add an additional tablespoon or two of breadcrumbs.

Divide the mixture into four equal portions and shape each portion into a patty, about 1.5 cm thick.
