Ingredients

  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 12 oz smoked sausage, sliced into rounds
  • 3 garlic cloves, minced
  • 15 oz canned white beans (such as cannellini), drained and rinsed
  • 6 cups baby spinach
  • 2 tbsp unsalted butter
  • 2 tbsp lemon juice
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup Parmesan cheese, grated (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.

Step 2

Heat olive oil in a large skillet over medium heat. Add the sliced smoked sausage and cook for 5-7 minutes, stirring occasionally, until browned and heated through. Remove the sausage from the skillet and set it aside.

Step 3

In the same skillet, lower the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn it.

Add the drained and rinsed white beans to the skillet and cook for 2-3 minutes, stirring gently to coat them in the garlic and oil.

Stir in the baby spinach, cooking for 2-3 minutes until wilted.
