Ingredients

  • 10 cups Fresh spinach
  • 1 cup Breadcrumbs
  • 0.5 cup Grated Parmesan cheese
  • 0.5 cup Grated mozzarella cheese
  • 1 teaspoon Onion powder
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried Italian seasoning
  • 2 large Eggs
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 1.5 cups Milk
  • 2 tablespoons Spicy brown mustard
  • 1 teaspoon Ground black peppercorns

Directions

Step 1

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

Bring a large pot of water to a boil and blanch the spinach for 1-2 minutes until wilted. Drain and rinse with cold water to cool. Squeeze out as much moisture as possible, then chop finely.

In a large bowl, combine the chopped spinach, breadcrumbs, Parmesan cheese, mozzarella cheese, onion powder, garlic powder, Italian seasoning, eggs, salt, and black pepper. Mix until well combined.
