Ingredients

  • 5 cups baby spinach
  • 8 ounces haloumi cheese
  • 6 slices bacon
  • 1 cup cherry tomatoes
  • 0.5 medium red onion
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Place the baby spinach in a large salad bowl. Set aside.

Step 2

Slice the haloumi into 1/4-inch thick pieces. Heat 1 tablespoon of olive oil in a pan over medium-high heat and fry the haloumi slices for 2-3 minutes on each side, or until golden brown. Remove and set aside on a plate.

In the same pan, add the bacon slices and cook over medium heat until crispy. Remove and place on a paper towel-lined plate to drain excess oil. Once cooled, crumble the bacon into bite-sized pieces.
