Preheat your oven to 375°F (190°C).
Bring a large pot of salted water to a boil. Cook the jumbo pasta shells according to package directions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for 1 minute until fragrant.
Add the ground turkey to the skillet. Cook, breaking it up with a spoon, until it is fully cooked and no longer pink, about 5-7 minutes. Season with the Italian seasoning, salt, and black pepper. Remove from heat and let cool slightly.
In a mixing bowl, combine the cooked ground turkey, ricotta cheese, 1 cup of shredded mozzarella, Parmesan cheese, thawed spinach, and egg. Stir until well combined.
Spread 1 cup of marinara sauce evenly over the bottom of a 9x13-inch baking dish.
Stuff each jumbo pasta shell with about 2 tablespoons of the turkey and spinach mixture. Place the stuffed shells in the baking dish with the open side up.
Pour the remaining marinara sauce over the shells, completely covering them. Sprinkle the remaining 0.5 cup of mozzarella cheese over the top.
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
