Ingredients

  • 12 ounces penne pasta (or other short pasta)
  • 1 cup ricotta cheese
  • 4 cups fresh spinach, chopped

  • 24 ounces marinara sauce
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with olive oil or cooking spray and set aside.

Step 2

Bring a large pot of salted water to a boil. Add the penne pasta and cook until just al dente according to package instructions. Drain and set aside.

Step 3

Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

Add the chopped fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
