Ingredients

  • 500 grams Potatoes
  • 200 grams Baby spinach
  • 2 tablespoons Butter
  • 3 cloves Garlic
  • 2 tablespoons All-purpose flour
  • 1 cup Milk
  • 0.5 cup Heavy cream
  • 0.25 cup Grated Parmesan cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Ground nutmeg
  • 4 cups Water

Directions

Step 1

Peel the potatoes and cut them into bite-sized cubes, about 1-inch pieces.

Step 2

In a large pot, bring 4 cups of water to a boil. Add a pinch of salt and cook the potatoes for 10-12 minutes, or until just tender. Drain and set aside.

Step 3

While the potatoes cook, rinse the baby spinach and set it aside to dry.

Step 4

In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for 30 seconds until fragrant.

Step 5

Stir in the flour and cook for 1-2 minutes, stirring constantly, until the flour turns golden and forms a paste.

Step 6

Slowly whisk in the milk, ensuring there are no lumps. Add the heavy cream and continue stirring until the sauce begins to thicken, about 3-4 minutes.

Step 7

Reduce the heat to low and add the grated Parmesan cheese, salt, black pepper, and ground nutmeg. Stir until the cheese is fully melted and incorporated.

Step 8

Gently fold the cooked potatoes and fresh spinach into the cream sauce. Cook for another 3-4 minutes, allowing the spinach to wilt and the potatoes to absorb some of the sauce.

Step 9

Taste the sauce and adjust the seasoning as needed.

Step 10

Remove from heat and serve immediately, garnished with additional Parmesan cheese if desired.
