Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 large yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups cremini mushrooms, diced
  • 3 cups fresh spinach, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 cup chicken or vegetable broth
  • 1 large egg, beaten
  • 2 cups bread crumbs
  • 0.5 cup parmesan cheese, grated (optional)
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.

Step 2

Heat the olive oil and butter in a large skillet over medium heat.

Step 3

Add the finely chopped onion and sauté for 3-4 minutes until softened.

Step 4

Stir in the minced garlic and cook for another 30 seconds until fragrant.

Step 5

Add the diced cremini mushrooms to the skillet and cook for 5-6 minutes, stirring occasionally, until the mushrooms release their moisture and it evaporates.

Step 6

Mix in the chopped spinach and cook for 2-3 minutes until wilted.

Step 7

Stir in the dried thyme, dried sage, salt, and ground black pepper. Remove the skillet from heat and let it cool slightly.

Step 8

In a large mixing bowl, combine the mushroom-spinach mixture, bread crumbs, beaten egg, chicken or vegetable broth, grated parmesan cheese (if using), and fresh parsley.

Step 9

Mix the ingredients thoroughly until everything comes together and holds its shape when pressed.

Step 10

Using clean hands or a cookie scoop, shape the mixture into 12 evenly sized balls and place them on the prepared baking sheet.

Step 11

Bake in the preheated oven for 20-25 minutes, or until the stuffing balls are golden brown and firm to the touch.

Step 12

Remove the stuffing balls from the oven and allow them to cool for a few minutes before serving.
