Ingredients

  • 8 cups Fresh spinach
  • 2 cups Mushrooms (button or cremini)
  • 3 cloves Garlic cloves
  • 2 tablespoons Olive oil
  • 1 tablespoon Soy sauce
  • 1 teaspoon Sesame oil
  • 0.5 teaspoons Red pepper flakes
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Wash and pat dry the spinach. Slice the mushrooms thinly and set them aside.

Step 2

Peel and finely mince the garlic cloves.

Step 3

Heat a large skillet or wok over medium-high heat. Add the olive oil and let it heat up for about 30 seconds.

Step 4

Add the minced garlic to the skillet and sauté for 1 minute until fragrant, being careful not to let it burn.

Step 5

Add the sliced mushrooms to the skillet and stir frequently, cooking for 5-6 minutes until they have released their moisture and are golden brown.

Step 6

Lower the heat to medium and add the fresh spinach to the skillet, stirring to combine with the mushrooms. Cook for 2-3 minutes, stirring occasionally, until the spinach has wilted.

Step 7

Drizzle the soy sauce and sesame oil over the spinach and mushrooms, then sprinkle in the red pepper flakes, salt, and black pepper. Stir well to evenly coat the vegetables with the seasonings.

Step 8

Taste and adjust seasoning if needed. Remove from heat and serve immediately as a side dish or over rice or noodles for a light main course.
