Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 8 ounces cremini mushrooms, sliced
  • 1.5 cups arborio rice
  • 0.5 cups dry white wine
  • 4 cups chicken or vegetable stock, warmed
  • 4 cups baby spinach
  • 0.5 cups parmesan cheese, grated
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh parsley, finely chopped (optional)

Directions

Step 1

Heat the olive oil and 1 tablespoon of butter in a large skillet or saucepan over medium heat.

Step 2

Add the chopped onion and sauté for 3-4 minutes until softened.

Step 3

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 4

Add the sliced mushrooms and a pinch of salt. Cook for 6-8 minutes until the mushrooms are tender and any liquid has evaporated.

Stir in the arborio rice and cook for 2 minutes, allowing the grains to toast lightly.

Pour in the white wine and stir constantly until fully absorbed.
