Ingredients

  • 300 grams Penne pasta
  • 150 grams Baby spinach
  • 250 grams Cremini mushrooms
  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 2 cups Whole milk
  • 50 grams Parmesan cheese, grated
  • 120 grams Mozzarella cheese, shredded
  • 1 tablespoon Olive oil
  • 2 cloves Garlic cloves, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Red pepper flakes (optional)
  • 0.25 teaspoon Nutmeg (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set aside.

Step 2

Bring a large pot of salted water to a boil. Cook the penne pasta until al dente according to package instructions. Drain and set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Add the sliced mushrooms to the skillet and cook for 5-7 minutes until softened and lightly browned. Stir in the baby spinach and cook for another 2-3 minutes until wilted. Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Remove from heat and set aside.
