Ingredients

  • 12 pieces Manicotti shells
  • 10 ounces Fresh spinach
  • 0.5 cups Kalamata olives, pitted and chopped
  • 2 cups Ricotta cheese
  • 1.5 cups Shredded mozzarella cheese
  • 0.5 cups Grated Parmesan cheese
  • 1 piece Large egg
  • 2 cloves Garlic, minced
  • 3 cups Marinara sauce
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Cook the manicotti shells according to package instructions until al dente. Drain and rinse with cold water to prevent sticking. Set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Step 4

Add the spinach to the skillet and cook for 2-3 minutes, stirring frequently, until wilted. Remove from heat and allow to cool slightly. Once cooled, chop the spinach finely.

Step 5

In a mixing bowl, combine the chopped spinach, ricotta cheese, 1 cup of shredded mozzarella, grated Parmesan, egg, Kalamata olives, salt, and black pepper. Mix until well combined.

Step 6

Spread 1 cup of marinara sauce evenly over the bottom of a 9x13-inch baking dish.

Step 7

Using a spoon or piping bag, carefully fill each manicotti shell with the spinach and cheese mixture. Place the filled shells in a single layer in the baking dish.

Step 8

Pour the remaining marinara sauce over the stuffed shells, ensuring they are completely covered. Sprinkle the remaining 0.5 cup of shredded mozzarella cheese on top.

Step 9

Cover the baking dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 10

Let the manicotti rest for 5 minutes before serving. Garnish with additional Parmesan or fresh basil if desired. Serve warm and enjoy!
