Bring a large pot of salted water to a boil. Cook the manicotti shells according to package instructions until al dente. Drain and rinse with cold water to prevent sticking. Set aside.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
Add the spinach to the skillet and cook for 2-3 minutes, stirring frequently, until wilted. Remove from heat and allow to cool slightly. Once cooled, chop the spinach finely.
In a mixing bowl, combine the chopped spinach, ricotta cheese, 1 cup of shredded mozzarella, grated Parmesan, egg, Kalamata olives, salt, and black pepper. Mix until well combined.
Spread 1 cup of marinara sauce evenly over the bottom of a 9x13-inch baking dish.
